We've spent the last year perfecting recipes and pairings

Pairing wine with food is not a new idea. Finding new ways to deliver it IS.

We've ("we" meaning a small wine and food group in Aspen and Denver) taken the idea of pairing down to a science thinking about every ingredient, texture and how they all play together on your palate.
We know Chicken goes with Chardonnay and Salmon can go with Pinot Noir. But we've taken it further to where we can say the 2006 Spy Valley Sauvignon Blanc goes with the Baked Rock Salt Salmon with Dijon Capers Vinaigrette recipe for these reasons. Each Chardonnay, Sauv Blanc, Cabernet, etc tastes different. Even from the same producer in different years.

We've become obsessive about hitting a moving target. Honing in on how food and wine's flavors balance out together on your palate has resulted in some tasty recipes that I've posted here.
Hopefully, some of you will get a chance to at least make some of the recipes even if you can't find the wines. They're so good you'll need a cigarette afterwards (even if you don't smoke!).

For many years here in the south SF Bay Area, I've been growing and harvesting organic chives, marjoram, sage, rosemary, parsleys, thymes, dill, lavender, and more. Not to mention a few varieties of squashes, peppers, and tomatoes! Homegrown's always better, and these days, with food prices appearing to be soaring, it's important to grow your own.

I just planted all of my herbs for the summer in an old French flower rack. It's 16 tins that are quite deep to hold cut flowers all on a old metal rack. I bought two bags of soil ammendment and dug a whole in the yard and mixed the ammendment (containing, Chicken poo, bat poo, worms etc..). I actually bought all the fledgling herbs at our local Rite Aid and planted on plant per container. I have basil, purple basil, lemon thyme, sage and orgeano. Sage and Oregano are very durable and had no trouble...the basil has needed care because it's gotten cold here after warming way up last weekend..but, all things being equal, they are very healthy a week into their replanting.

Margie, what part of the country do you live in?

BTW - I found some cool little garden signs for each herb on eBay under "garden signs". I'd have to go look to see who the seller was, but they seem like a nice little accessory with all those wonderful herbs.

I grow mint, chocolate mint, thyme, lemon thyme, rosemary, basil, lemon basil, chives, parsley, sage, marjoram, oregano, All have done really well in a raised bed, and the rosemary, chives, parsley, sage and mint grow year 'round. I replant the others in March and they take me through Novemeber. Once bed 6' by 4' grows plenty for a small household of people (who cook - A LOT). I like my basil though, so I keep at least 8 plants going.

"attempt" to grow my own herbs, is more like it. Successes so far: spearmint, rosemary, oregano, chives. Short-lived successes: basil, apple mint, Italian parsley. Out-right failures: lavender, cilantro, lemon thyme, Greek basil. The problem is that I'm trying to grow them all on a very small balcony with either full, blazing sunlight (summer) or weak, morning-only sunlight (winter.) I think I've made some bad pot-pairings as well -- put rosemary in with cilantro, for example. I need to rethink my herb strategy, but just haven't had the heart to start all over :(

The site is up. These recipes are available via mobile browser. You can search wine via recipes or search recipes via wine. Culination.mobi was created to have recipes available at all times, especially when standing in a grocery store wondering what to make for dinner.

I grow my own herbs and have for years. But I did move a year ago and starting over. In fact, just yesterday I was admiring how my chives, two different sages, two different thymes (one is lemon), the rosemary and three different lavenders made it through the winter.
