That's good. Keep at it. It's like a language. When you first hear it, you can't make sense of it. With time, words and meanings gain resolution. When I was learning sensory assessment, I would often get reference aromas: fruits, vegetables and spices from the grocery store. I would even seek out opportunities to smell flowers I had not smelled before (I finally got my brain around acacia a few years back).

BTW, Apricot is common in Viognier as are gardenia and acacia and honey - the latter is more prominent with increasing ripeness. I wonder what the % ABV on that wine was. More than 15%? The custard is more textural and you can get that with whites like Viognier that have gotten lots of malo and sur lie ageing. Lots of new oak can contribute to that as can big ripeness (lower acids). The green apple is interesting. Some people confuse lime for green apple. I am not saying you did. I haven't had this wine so I can only speculate. In some years or in certain climates or growing circumstances, there is a lingering vegetal greenness to Vigonier that offsets minerality. So you may not be too far off.

That's cool. Although rads and nukes do not always see eye to eye owing to the former's propensity to take away billable procedures from the latter. The problem is that you can't learn in 4 months what takes a 3 year residency to master.
