I know you are going to hear a lot of people tell you just to sign up with a winery and forget school. My opinion is, sure that works but I don't have to tell you that with school is that added polish that you aren't going to get being a cellar rat. Because at a winery, that is exactly where you will kind of get stuck - - at first. A winery isn't going to run through sensory evaluation classes, soil science and viticulture courses, how to market your wine effectively, etc. If you look at the long term of it here is how you will feel: If you go to through the program, you will never be sorry. If you don't and go to work as a cellar rat, you will always wonder. And then again, eventually many of the students find jobs at a winery and do both.
Don't second guess your goal on this and most important don't let others make you second guess. You are on the right path.

Maybe I'll just skip all of it and move to Tahoe. :-)
